Pizza Brine in Your Martini - Spring Street opens a bar next door
One of south London's top pizza joints is opening a 2,500 sq ft martini bar in the Borough arches. No pizza allowed, though.

Dirty martini fans, this one's for you. Spring Street Pizza, from Michelin-starred chef Tom Kemble, is opening a 2,500 sq ft cocktail bar in the railway arch next to its Borough pizza parlour, Time Out reports. Opening is pencilled in for 13 October.
The star of the show is a dedicated martini list. Expect an olive oil martini made with the restaurant's own pizza brine and a buffalo cheese martini, which sounds unhinged in the best way. Food comes as Italian bar snacks rather than pies: crudo, fritti, meatballs and mortadella sliders.
The cheeky bit is that the bar won't serve pizza. If you want a slice, you walk next door to the original. Honestly, that's a solid two-stop night out.
So what? Borough just got a proper pre-dinner spot, or a post-dinner one, or both if you're feeling brave. Savoury, food-led martinis are everywhere right now, and this looks like one of the more playful takes. Bartenders, keep an eye on that brine trick. Your regulars will be asking for it by Christmas.
