Chef Andrew Sheridan opens Counter in Manchester's Island Building on John Dalton Street at noon on Monday 9 November, About Manchester reports. It is the first city centre site for Open Restaurant Group and its second in Greater Manchester, after Arcadian in Didsbury.

The room: 60 covers, with four-metre elm trees, curved booths and a brass wine display. The heart of it is a four to five seat chef's counter at the pass.

The food: global flavours, played with. Expect a beef tartare pressed croissant with smoked oyster mayo and wasabi, a tuna pizza on a sesame base, and a scallop hash brown with brown butter satay. From the grill there is satay spatchcock chicken and a turbot steak with preserved lemon.

The local touch: two puddings nod to the city. Vimto 1908 pairs Vimto jelly with baked yoghurt and vanilla sponge. The Manchester Glory layers custard, coconut ice cream and whipped mascarpone.

The drinks: led by Jake Nutt, who joins from the two-Michelin-starred Ynyshir in Wales.

Go if: you want a lively lunch or a seat at the counter. Book at restaurantcounter.co.uk.
