North East brunch brand Pablo's signs first franchise and heads for London
The breakfast bao chain will open inside BLOODsports in Covent Garden in January, the first step in a plan to reach at least 11 sites by mid-2027.

Pablo's, the breakfast and brunch brand founded in the North East in 2020, has signed its first franchise agreement, Restaurant Online reports. The partner is Scott Collins, founder of Covent Garden sports bar BLOODsports, where Pablo's will run a permanent kitchen from January 2027, open 7am to 2pm.
The six-site brand trades across the North East and in Edinburgh, selling breakfast bao buns, loaded hash browns and at-home kits. It is working with franchise consultancy Presman & Colard, which is in talks with further prospective franchisees and targeting at least five new openings by mid-2027. Founders Emma Dent and Edward Evans call London the first step to building a national brand.
What it means for operators: this is a capital-light route out of a home region, with a daytime kitchen sitting inside a venue that trades mainly in the evening. Bar operators with an idle kitchen before noon should expect more of these approaches; the terms to watch are the revenue split, kitchen access and who carries the staffing.
