A notable kitchen reshuffle in London pub land. Ben Tish has stepped down as chef director of Cubitt House after five years, The Caterer reports. It comes roughly six months after Young's bought nine Cubitt House pubs for around £30m.

He's not vanishing, mind. Tish stays on as chef consultant, helping with new openings and guiding head chefs and kitchen teams on menus. He'll also keep an ambassador role for events, collabs and marketing. He says the food philosophy isn't changing, and the new setup frees him up for projects outside the group.

Tish joined Cubitt House in October 2021 to help grow the estate alongside Sam and Georgie Pearman, and brought a produce-led style built on close relationships with farmers and growers. Before that he spent three years as culinary director at the Stafford London, where he opened Norma in 2019. Young's now runs more than 280 pubs across London and the south of England.

So what for hospo people? When a big group buys a smaller one, the founders and star chefs often shift sideways within a year. That's not always bad news. Consultant roles can protect a menu's soul. For head chefs in the estate it could mean more ownership of their own pass. Watch this space for Tish's next project.
